Recipe worth trying and GOOD NEWS!

First, I'll start off my directing the attention to Angela who in addition to taking care of three kids, taking care of the house, making food constantly, and fitting in time for herself once in awhile (for important things like brushing her teeth and showering) has managed to surprise me with an early Christmas present- TWO, count um TWO new posts on her blog. I vote her most improved this month in the blog world!

Second, I don't usually do this cause I don't have any great ideas, but I'm going to share a recipe. I'm just going to say that at our house we usually eat to survive, but this had us rethinking the whole dinner thing...'hum, dinner can be a delight'...

Chicken Lo Mein

Prep Time: 10 min
Ready In: 25 min
Serves: 4 servings, 2 cups each

Ingredients
1/2 lb. spaghetti, uncooked
1/4 cup KRAFT Asian Toasted Sesame Dressing
1 lb. boneless skinless chicken breasts, cut into strips
2 cloves garlic, minced
2 green peppers
1 red pepper
1 cup bean sprouts
1 onion, quartered
1/2 cup fat-free reduced-sodium chicken broth
1 Tbsp. peanut butter
1/4 cup lite soy sauce
2 Tbsp. chopped cilantro
2 Tbsp. chopped PLANTERS COCKTAIL Peanuts

Preparation
COOK spaghetti in large saucepan as directed on package.

MEANWHILE, heat dressing in large nonstick skillet on medium-high heat. Add chicken and garlic; stir-fry 3 min. or until chicken is no longer pink. Add peppers, onions, sprouts, broth and peanut butter; stir-fry an additional 3 to 4 min. or until chicken is cooked through.

DRAIN spaghetti; return to pan. Add chicken mixture and soy sauce; mix well. Spoon onto serving platter; sprinkle with cilantro and peanuts.

  1. Wow Celeste, thanks for the shout out. I'm honored to be "most improved this month," it's quite an honor. Recipe looks good, I'll have to get brave and go to the grocery store sometime (maybe after the kids are asleep and daddy's home) and get the ingredients!
